My car does this weird fluctuating idle on a cold start. If I start the car and let it sit for a few minutes, I don't have the problem. But, if I start the car and go driving, the idle will go back and forth between 1000 and 2000 RPMs. Anybody have any suggestions to look for? IAC valve, EGR?

IACV, FITV, Vaccum leaks, EGR, Idle set screw too far out. Could be so many things.

Bleed/top off the coolant.. seems like that might be the issue since its only on cold starts.. id go from there since its easy and cheap. then maybe clean IACV.

do a valve lash adjustment, then adjust the idle and ignition timing. that should fully cure the problem.
if it still does it a bit or the same, check the FIV (fast idle valve, the idle valve powered only by coolant, not electrical). take the cover off and crank the plastic screw down.
if that still doesnt fix it, you have a minor vacuum leak somewhere. either a small hole in a vacuum line or gasket, or a bad pcv valve.
